Beef heart is one of the healthiest (and tasty) portions of beef available. Along with other organ meats, heart is full of nutrients, and is thought to be pound-for-pound more nutritious than muscle meats.
In the Fisher household, we prefer beef heart as a lunch/deli meat. After removing the fat pockets and fatty outside layer, simply slow boil the heart–along with a bit of water and a splash of apple cider vinegar–in a pan or crockpot. Cook it until it’s soft and tender. After allowing it to cool simply slice it thin across the grain, and you have an excellent and delicious deli meat for sandwiches or as a snack with cheese etc.
