Known in the Jewish community as schmaltz, our chicken lard is rendered from fat harvested during the dressing of our own meat chicken, resulting in a beautiful yellow lard that can be used for a variety of applications from deep-frying to baking. Turning to a semi-liquid form at room temperature, it’s more like an oil than pork lard, and can be used as a butter substitute in many dishes.
