Heritage-blend All-Purpose Bread Flour

An interesting blend of heritage wheat from a local grower and miller in nearby Kinzers, PA., the Heritage Blend is made from a blend of mostly hard red wheat varieties and some white wheat. 

Perfect for baking your own homemade bread, muffins, rolls, etc., it's an all-purpose flour that you can really feel good about. Not only is it grown organically, but it's grown locally on a small Amish farm, and stone-ground on the farm as well. This in itself makes this flour an anomaly in the age of commercial wheat production. 

While commercial flours come from modern short-stemmed wheat varieties with high gluten concentrations, this flour is from older less-modified-more-natural wheat varieties. Commercial flours are made from wheat that is desiccated with high concentrations of glyphosate just before harvest (to speed dry-down), this flour is grown organically and is not desiccated with glyphosate or any other chemical. While commercial flours are ground long before it reaches consumer hands and stored in large warehouses, this flour, is milled much closer to the final sale (and at Pasture to Fork we store it in our walk-in cooler to discourage rancidity). I could go on but suffice it to say this flour is not your run-of-the-mill commercial flour.
