Pastured Pullet Eggs*

Pullets are young laying hens that have just started laying eggs (or are about to lay). The first eggs they lay are about 25% smaller, both in the overall egg size and the size of the yolk and white. Although they are smaller, they are just as flavorful as regular eggs.

When we're starting a new layer flock here at Pasture to Fork, we get pullet eggs for a few weeks that we can't sell as regular eggs (obviously). While it may require adding another egg or two to recipes, pullet eggs are perfect for use wherever regular eggs are used.

Due to the smaller size, pullet eggs are considerably more economical than regular eggs. This is twofold. One, we don't like to just throw them out for lack of market demand. Two, they are perfect to use and we want to provide them to you at a low cost.

At Pasture to Fork, we raise our own laying hens from baby chicks, whereas many farms purchase commercially raised ready-to-lay pullets (to avoid the cost of raising them). We do this because we want control of the raising process to ensure they are not vaccinated, fed GMO's or soy, and that they are pasture raised at an early age.
