This is not your typical honey-bear honey from the supermarket. Raw honey has a flavor and texture profile that supermarket "honey" lacks and is honest-to-goodness honey throughout with nothing added and nothing removed.
Real raw honey is loaded with prebiotics and probiotics and contains anti-bacterial and anti-inflammatory properties, as well as diverse variety of friendly bacteria that support gut health. The application of honey has been known for thousands of years, and in recent times has garnered a surge of attention as a sweetener and a health food, but as always, the truth about how bad commercially produced honey is lags behind the increase in interest.
Honey is one of the most adulterated foods in our food supply, with some estimates saying up to 70% of all honey sold in the United States is adulterated or fake in some way, including having manufactured sweeteners like high-fructose corn syrup added in to the tune of up to 60%, no label required).
According to the USDA in 2020, American imports of honey accounted for about seventy percent of all honey on the market, with the leading suppliers are Vietnam, Argentina, Brazil, and the Ukraine. Not surprisingly, little information is available of how imported honey from these far-flung nations is produced or what is added/removed.
This honey comes from central New York state, and while it's not certified organic (which is nearly impossible given the distance bees travel for nectar), the apiary is careful to keep the hives away from monocrops and the chemicals they're sprayed with. Our honey is primarily derived from wildflowers and other natural nectar from wild areas.
