Uncured Pork Belly

Uncured pork belly comes from the same area of the carcass as bacon, so it's simply uncured unsliced bacon. It can be prepared innumerable different ways using Danish recipes to American style bacon to ___________________ (fill in the blank). 

While some pork belly comes with the skin still on, ours is peeled (skin-off). The skin is left on for certain recipes that use the skin as a rind of sorts to protect the meat, but because our hogs are skinned at slaughter, our pork belly does not include the skin.
