Known in the Jewish community as schmaltz, our chicken lard is rendered from fat harvested during the dressing of our own pasture raised meat chickens, resulting in a beautiful yellowish-white lard that can be used for a variety of applications from deep-frying to baking.
Not only does chicken lard offer some amazing flavor benefits, but because it can tolerate high cooking temperatures, making it a dream for high-temperature cooking recipes. Turning to a semi-liquid form at room temperature, it’s more like an oil than pork lard, and can be used as a butter substitute in many dishes.
